Mr. Somm and T are loyal fans of Ashford Castle which was founded in 1228 by the O’Connors of Connaught. According to their website, this 800-year-old castle is truly remarkable, a grand, historic structure with national significance. The former home of the Guinness family, it has hosted countless notables over the years, including The Prince of Wales (who later became King George V) and President Ronald Reagan, and served as the striking backdrop for 1951 movie, The Quiet Man. Red Carnation’s impeccable five-year restoration, drawing on local experts and artisans, has brought these ancient walls and storied rooms back to glorious life.

They offer 30+ activities including Ireland’s first school of falconry. Other activities include fishing, horse-riding, off -roadin and ziplining among others.. Tiffany's fav rooms are the billards/snooker room and the cinema. They have an amazing spa. The dungeon hosts wine tasting - the current owners have a South African vineyard.
